Yadodo Crepes

Fried yam, plantain and peppered stew is always a street food, savory and never satisfying. My mind kept going to this food and decided to give it a shot but with a gizdodo twist resembling the stuffed European Crepes which I later called Yadodo Crepes.
This recipe is so filling and your Oliver Twist will not resist asking for more. The leftover after Iftar can be reheated and served at Sahur of the next day in the month of Ramadhan or packed as box lunch for kids that are not fasting to school. Yes, I love food recycling alot. This dish can be eaten outside the fasting time as well.
Yadodo Crepes

Cooking Instructions

Wash and cube the yam. soak the yam inside salt water for 20 minutes. this is one of the secret to the awesomeness of this food sold on the street

Warm up frying pan, heat up cooking oil. reduce the heat source a bit when the oil is already hot, add some yam cubes cubes along with few drops of the salt water and later fry till golden brown and crispy on both sides. The yam will first cook in the salt water and later fry in the oil.

Continue frying till all yam cubes have been used up. set asidw

Wipe same pan, add in cooking oil and fry plantain cubes till golden brown

In a non stick pot, add already fried pepper stew, cubed vegetables, sprinkle salt and natural seasoning.allow it to cook on a low heat till the veggies get soft

Add the crispy yam inside the veggy peppered sauce and allow it to mix very on a low heat. after short while, add the plantain and mix very well for 5-10 minutes.

Prepare the crepes or pan cakes, plate them by putting the yadodo as fillers on the crepes and wrap round

Or serve as side dish
