Bini Owo with Unripe Plantain

I think there's a secret in potash when combined with palm oil that makes any food cooked with it, turn out so deliciiiiiiiious. Think of Isi-ewu, Nkwobi, Abacha, containing potash are so much loved by people, hmmmmmmm.
I learnt this food from a bini male friend who is a Lecturer, he taught me how it's done.
The bini Owo from Edo state is very different from that of Delta State. While the deltans uses garri , special salt and special palm oil as stated in some recipes. The colour of the Delta Owo is yellowish usually eaten with Starch.
The bini's uses Potash and plain palm oil..
If not told the bini Owo can easily pass as stew because tomatoes is the main ingredient used with dry Catfish and other dry fish. But the difference from normal Stew, is in the taste. Oh so delicious and it's eaten with Yam and unripe plantain.

Ingredients

  1. Ripe Tomatoes
  2. Fresh scotch bonnet peppers
  3. cubesSeasoning
  4. 1 tablespoonpotash
  5. Salt (optional)
  6. Enough crayfish
  7. Big prawns
  8. Dry Catfish
  9. Onions
  10. Fresh fish(optional)
  11. Meat(optional)
  12. 2cookingspoon palm oil

Cooking Instructions

  1. 1

    Wash everything needed for the cooking and set aside.

    Blend the tomatoes with enough crayfish, onions and the peppers.

  3. 3

    Cook your yam or unripe plantain, whichever you're using and keep aside

  4. 4

    Parboil the meat first if using and
    Pour the tomatoes mixture inside the pot with the meat. Add the prawns, dry fishes, seasoning cubes, salt and allow to boil to a very thick consistency until the water almost dries up.

    Before the tomatoes dries up water break and grind the potash if using unbroken one. Measure with 1tablespoon and add to the mixture. The colour of the Soup automatically darkens until palm oil is added.

    Drop from heat and measure 2cookingspoon of palm oil and add to the mix. Stir very well. Place back on heat to heat up the palm oil for like 3minutes before dropping finally.

    Another method of adding the potash is by disolving the blended potash in warm little water as done with Isi ewu. Put the 2cookingspoon palm oil in another pot and turn the potash liquid inside. Stir it very well to become yellowish and add it to the tomatoes mix before placing it back on heat to warm up.

    Please be generous with your palm oil, I wasn't because I wanted it that way
