Ingredients

  1. 3 cupsrice
  2. 1/2 cupveg oil
  3. 1 tbspncurry
  4. 1/2tspn white pepper
  5. 1/2tspn black pepper
  6. 3 pcsscotch bonnets
  7. Scallion
  8. Thyme
  9. 1bulb onion (chopped)
  10. 1/2tspn garlic & ginger paste
  11. 3knoor maggi
  12. 1 sachetonga classic
  13. to tasteSalt
  14. 2 pcsbay leave
  15. Chicken stock
  16. as neededWater

Cooking Instructions

  1. 1

    Parboil the rice with salt and curry. Wash and set aside.

  2. 2

    In a pot heat up oil,add in chopped, onion, ginger and garlic paste,chopped scotch bonnets and fry for about 5mins.

    Add in some water,chicken stock,seasoning, curry,thyme,black pepper,white pepper,bay leave cover it and bring to boil.

    Add in your parboiled rice,cook on medium heat until water starts to thicken a bit.

    When done add in the scallion, cover it to steam and enjoy with coleslaw,fried chicken or peppered chicken are any thing of your choice
