Brad's jalapeño cheddar deviled eggs

Ingredients

8 servings
  1. 8large eggs
  2. 2jalapenos
  3. 1/2 cupsour cream
  4. 1 tbsdijon mustard
  5. 1/2 cupshredded sharp cheddar
  6. to tastesalt and pepper
  7. hungarian paprika for garnish

Cooking Instructions

  1. 1

    Place eggs in cold water to cover. Place on high heat. And bring to a boil. Once at a hard boil boil for ten minutes.

    When done, rinse under cold water. Place four large handfulls of ice in water. Let eggs chill in ice bath untill ice melts

  3. 3

    Meanwhile, char two jalapenos over open flame untill skin blackens.

    Once blackened place peppers in a bag and seal for ten minutes

  5. 5

    Once peppers steam, peel charred skin off. Remove seeds. Mince one pepper and julliene the other

  6. 6

    Once ice has melted, peel eggs. Cut eggs in half and remove yolks

  7. 7

    Plate eggs. Put minced pepper, yolks, sour cream, mustard, cheese, salt and pepper in a bowl. Mix until creamy

    Divide mixture evenly between eggs. Garnish with paprika. Place a julliened pepper on top.

cooking is a passion of mine. I started when I was very young and I had to drag a milk crate around to see over the counter. taught by a career cook (my grandmother ). I have always tried to push the boundaries of conventional cooking. I prefer cooking wild game. when I can get my hands on it, but fish is more readily available for me. I raise and butcher most of the livestock that I use for my conventional recipes. I hope everyone can find a few recipes they like in my list.
