#damburecipecontest Dambu is one of the northern delicacies and enjoyed by a lot of people, this dambu was inspired by one of my grand aunt who is diabetic and couldn't eat the regular dambun shinkafa, dambun masara and dambun gero. This is so far the most healthiest dambu recipe, it is made with only fresh ingredients and served with a healthy salad that contains high Fibre that can lower the risk of heart attack as a side, it is filling and protects the skin as well.

Ingredients

  1. 1 cupacca
  2. 2 tablespoonolive oil and extra for salad dressing
  3. 2 tablespoonvinegar
  4. 1/2 cupsgreen peas
  5. to tasteSalt and seasonings
  6. 1/2medium sized sweetcorn
  7. 1 cupdiced carrots
  8. 1/2 teaspoonGinger and garlic paste
  9. 1 pinchblack seed and cinnamon
  10. 1small onion
  11. 5scotch bonnet
  12. 2capsicum
  13. 1medium sized cucumber

Cooking Instructions

    Pick and wash the acca to remove dirt and sand, drain and soak in water for 10mins. Cook the corn and set aside

    Drain and steam in a steamer for 10mins, transfer to a bowl and add the salt, seasonings, cinnamon and black seed, add the blended pepper, capsicum and onions, toss, add ginger and garlic paste, add a handful of peas, a handful of corn and some carrots, finally add 2 tablespoon of olive oil and sir till well incorporated, transfer to a steamer and steam for about 15mins

    For the salad add diced carrots and cucumber in a bowl, add peas and corn, toss, sprinkle a pinch of salt, add 2 tablespoons of vinegar and olive oil and toss well

    Once you are done with the salad serve the dambu and garnish with the salad as you can see from the picture a got a small bowl and stuffed the dambu in it and turn it over in the serving plate car, I then added then garnish with the salad
