Cauliflower "flatbread"

This is another way to use caulflower, this is a simple appetizer , good for dips or served along side salads. The texture is like a flatbread with seasonungs.

Ingredients

  1. To prepare cauliflower
  2. 1whole cauliflower, cut up into small pieces most of stem removed
  3. olive oil for brushing pan and drizzling
  4. to tastesalt and pepper
  5. For Cauiflower Cheese "bread" sqares
  6. 1 tablespoonsour cream
  7. 1/2 teaspoongranulated garlic
  8. 1/4 teaspoonitalian seasoning
  9. 1green onion, thinly sliced
  10. 1/4 cupfrsh grated romano cheese
  11. 1/2 cupshredded sharp cheddar cheese
  12. 2eggs, lightly beaten
  13. 1 teaspoonfresh lemon juice
  14. Ranch dip and mustard sauce for dipping

    Preheat oven to 450. Line a baking sheet with foil. Brush the foil with a layer of olive oil

    Place cauliflower pieces in food processor in batches, don't overfill or it will not chop it finley

  3. 3

    Chop to a fine rice like texture

    Spread cauliflower on prepared pan, season with salt and pepper and drizzle very lightly with olive oil. Roast until golden about 20 minutes, stirring for even cooking

    Add cooked cauliflower to a bowl and add remaining ingredients, mix

    Have oven at 425. Line a baking sheet with foil. Spray foil well with non stick spray

    Spread cauliflower nixture about 1/4 inch thick and roast until firm and lightly browned. About 15 minutes, watch as they burn quickluy

    Cut into sqares and serve w ith Ranch dip and Creamy mustard sauce for dipping

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
