Bf or lunch , you can serve with eggs over, Guacamole, salsa or just simply a scoop sour cream. ( Corn meal and corn flour are both ground corn.but corn flour has much finer texture than corn meal. this recipe requires corn meal.if you use corn flour instead of corn meal,it would give you totally different textural result.You would not like it,you would ended up corn burger)

Ingredients

  1. 1 cupcornmeal
  2. 1/2 tspsalt
  3. 1/2 cupcheddar cheese
  4. 1 cupmilk
  5. 2 tbsbutter
  6. 1/2 cupcorn
  7. 1/3 cupscallions (chopped)
  8. Handfulfresh parsley
  9. 1 tspred pepper(hot)
  10. 4 tbsoil for frying
  11. Sour cream for toppings

Cooking Instructions

    Cornmeal, salt, cheese to a bowl. Keep aside

    In a saucepan, heat milk with butter over a medium heat, until butter melts, remove from heat. Pour into. Cornmeal mixture, stir, make batter, add greens. Pepper, corns

    Heat oil in a nonstick skillet (I did fry with metal skillet, my arepas ruined, after I used a nonstick frying pan,) cook each side 4-5 minutes, until color turns golden and crispy

    Serve with a spoon of sour cream and fresh parsley. With this recipe I made 6 thick arepas, (I used measuring cup to form balls, you can make it thinner discs to make more arepas.)

I used to be a runner. One day middle of the run, I had my feet numb up to my knee. It was sciatica from a car accident years ago. Then because having problems with my Achilles, I started using a cane. Now I changed my diet completely... no more sugar or process foods. My recent recipes are vegetarian, I do not eat meat anymore! Also no sugar, flour and very low carbohydrate meals .This is my journey now. Good luck on yours! 😄✌️

I have never made anything like this. Do you use just regular cornmeal, that you would use for cornbread?
