Appe is cut, healthy and very popular South Indian snack. The traditional Appe are usually made from left over idli batter or instant ones can be prepared quickly using semolina batter and curds. This version of Appe is slightly twisted as it is prepared using ingredients to provide extra nutrients and enrich the taste especially for kids.

Ingredients

10-12 pcs
  1. 1 cupyellow moong dal (split yellow gram), soaked for 2-3 hrs and drained
  2. 2 tbspsemolina
  3. 2 tbspcurd
  4. 1/2 cupboiled and mashed sweet kernels
  5. 1 cupboiled and chopped spinach
  6. 3 tbspgrated cheese
  7. 1/2 tspginger-garlic (adrak-lehsun) paste
  8. 2 tspchaat masala
  9. 1 tspsoda bi- carbonate
  10. to tastesalt
  11. other Ingredients:

  13. as requiredCoconut chutney or tomato sauce
  14. 1 tspoil for greasing and cooking
  15. 1 tbspmustard and sesame seeds mixed

Cooking Instructions

    Soak moong dal for 2 -3 hrs, grind it adding garlic - ginger paste and green chillies as per taste. Make thick batter. If batter is not thick it won’t shape well as appes

    Next add semolina and curd to the batter. Add chopped spinach, mashed sweet kernel, Chaat masala and salt. Mix well. Keep it aside for half an hour at least.

    Add the soda bi carbonate to the batter and ensure to move it one direction only to mix it well.

    Pre heat appam pan, grease it with oil. Sprinkle sesame seeds and mustard seeds. Once it starts to crackle put 2 tbsp of the batter in it.

    Let it cook on medium flame. Cover the appam pan with lid.
    Once the lower surface becomes golden brown turn each appe upside down using a spoon so as to cook them from the other side as well and let it cook for 2 minutes.

    Serve immediately or pack it up in tiffins for kids with coconut chutney or tomato 🍅 sauce.
