Ingredients

  1. 3-4 poundChuck Roast Trimmed
  2. 2 LbsCarrots peeled and sliced long
  3. 3Large Onions peeled and quartered
  4. 1 CupWater
  5. 1/4 CupSweet Chilli Sauce (I use Mae Ploy brand)
  6. 1/4 CupHoisin Sauce
  7. 2 TspMinced Garlic
  8. to tasteParsley Flakes
  9. to tasteto Dried Basil
  10. to tastePaprika
  11. 1 TbspOlive Oil
  12. 3 TbspADDITIONAL Olive Oil
  13. 1 TspCorn Starch
  14. 1/2 cupcold Water

Cooking Instructions

    Preheat Oven to 375 degrees Fahrenheit

  2. 2

    Take Chuck Roast and place in deep roasting pan or deep glass baking dish

  3. 3

    Cut carrots and onions and place to the side.

  4. 4

    Take a medium size mixing bowl and add next 8 ingredients and mix well and place in fridge till ready to use

  5. 5

    Take a large deep frying pan and add 3 Tbsp of olive oil. Heat on high

  6. 6

    When hot add roast and sear 3 minutes on each side

  7. 7

    Return roast to baking dish or roasting pan.

  8. 8

    Arrange carrots and onion in pan with roast

  9. 9

    Pour liquid mixture over roast and vegetables.

  10. 10

    Cover tightly with aluminum foil.

  11. 11

    Place in oven for 3.5 hours. Low and Slow is the trick

  12. 12

    At the last 1/2 hour combine cornstarch and COLD water until completely dissolved.

    Remove Roast from Oven

  14. 14

    Slowly pour in cornstarch mixture while gently stirring into the roast juice. You can skip this step if you don't want gravy.

    Place roast back in oven for 1/2 hour and remove.

    Let it rest for 10 minutes and serve with rice or mashed potatoes
