Kulcha Naan/ Indian flat bread Kulcha Naan/ Indian flat bread
Naan is a leavened, oven-baked flatbread found in the cuisines mainly of India. It mostly consists of egg and milk products like yogurt. The egg brings crispiness to the naan while the yogurt helps in digestion of the gluten. It is generally prepared from wheat flour. However, spices are not used in naan. Spices are mostly used to make kulchas. Therefore, what I present here can better be called kulcha naan.#epicureanfeast #loveforfood #indianbread The Epicurean Feast -
Ethiopian Injera Sourdough Flatbread Ethiopian Injera Sourdough Flatbread
I became hooked on the injera and wat (Ethiopian curry) that my colleague would always give me. Now, it's become an essential part of my meals, in addition to rice. Like a sour crepe, this sponge-like bread absorbs the soup of the curry, making it delicious.Teff is a fine grain from Ethiopia that resembles buckwheat flour. In the U.S., you can order it online. This is also delicious made without any teff flour. Timing is important; if you let it stand too long, the batter will stick to the frying pan and the taste will become foul. Be sure to carefully watch the degree of fermentation. Recipe by Puyoeri cookpad.japan -

Chickpea Flatbread (Farinata) Chickpea Flatbread (Farinata)
Also known as cecina or farinata, and in Livorno as '5 e 5'.This is an old dish that, like most humble recipes, requires just a few ingredients and simple preparation. The Livorno version should be thin, soft inside, and have a crispy crust on top.It should be eaten piping hot with a generous sprinkle of black pepper, maybe inside a small baguette or focaccia. Tonight, I'm happy with a slice of my homemade bread...Ideally, it's baked in a wood-fired oven, but you can get great results at home with a regular oven set to its highest temperature! Pan-Fried Rice and Wheat Flatbread Pan-Fried Rice and Wheat Flatbread
When rice flour meets wheat flour, what kind of texture will you get? During the stay-at-home period, I got creative with meals. I had some rice flour left and a 5-kilogram bag of all-purpose flour... With a simple twist, it became our weekend dinner. This chewy, delicious flatbread is so good, you’ll want more with every bite. Wheat flour is mainly made from wheat, and all-purpose flour has about 11% protein. All-purpose flour is versatile and great for making Chinese pastries that are soft yet chewy. Mixing flour with water creates a dough that’s elastic and stretchy, thanks to gluten. Rice flour is made from rice and is also called glutinous rice flour. Pastries made with rice flour are soft and delicate. Some people are allergic to gluten in wheat flour, so they choose gluten-free products. You can use glutinous rice flour or regular rice flour as a gluten-free alternative, which gives a different flavor and texture. This recipe uses a mix of wheat flour and rice flour to reduce gluten and allergens. 凱茜媽咪の廚房Translated from Cookpad Taiwan -
