I often make pancakes for breakfast, so I wanted to make them using cake flour, which I always have in reserve.

Since you add milk in batches, you don't have to sift the dry ingredients! The key is to be patient and wait until the batter starts to expand. Recipe by tonsayu

Ingredients

2 servings
  1. 1Egg (large size)
  2. 120 gramsCake flour
  3. 1 pinchSalt
  4. 30 gramsGranulated sugar
  5. 1 tbspOil
  6. 1 tbspPancake syrup (or honey)
  7. 5 gramsBaking powder
  8. 80 mlMilk
  9. 1few drops Vanilla extract

Cooking Instructions

    Add the eggs, salt, and granulated sugar to a bowl and mix well. Then add the oil and pancake syrup and mix.

    Heat the frying pan on low. Add 40 ml of milk to the bowl and mix, then add cake flour and baking powder, and mix until no longer powdery.

    Add the remaining milk and mix well. Then, add the vanilla extract.

    Pour half of the batter into your warmed frying pan, and cook for 6 minutes on a slightly higher low heat.

    Once the top has swelled, flip it over, cover, and cook for 2 minutes.

    Top with butter and pancake syrup (not listed) and it's done.
