This is very popular in America. Corn is the star of this recipe. You can also add your favorite vegetable. I included potato also as one of the ingredients along with quite a few other veggies-- Watercress , Cauliflower. Onions, garlic and etc. Soup is loaded with healthy nutrients. It is a mixture of flavors, tastes, aroma and what not. Watercress like Cauliflower, is a member of the cabbage family; It grows in water. It Prevents osteoporosis, cancer, lowers cholesterol, and is good for the heart. Vitamins A, C and many more beneficial minerals. Soup is a Comfort food packed with disease-fighting ingredients

Add butter to a heavy saucepan over medium heat. After the butter melts. add onions and garlic and saute for 2-3 minutes. Add wheat flour and stir. This is called roux. It thickens the soup; Add corn and stir for 2 minutes

Add celery, watercress and stir. After 2 minutes add 3 cups of water. Let it boil. Add the potato pieces and bring to a boil. Then simmer, When it, add coconut milk and stir. Turn off the stove. Add salt. I use organic Himalayan pink salt.

Grind white pepper with a pepper mill, sprinkle the freshly ground pepper on the top of the soup. Garnish with cilantro
Healthy flavorful spicy tasty hearty chowder is ready for your eating pleasure.. A small bowl of soup is a complete meal.
