I made these cupcakes because of my husband and daughters love of cinnamon bears. It was a surprise cupcake to hold the little bears! The cupcakes were so good that we were eating them for dessert.....and breakfast!

Ingredients

  1. CUPCAKES
  2. 1 2/3 cupall-purpose flour
  3. 1 cupgranulated sugar
  4. 1 tspground cinnamon
  5. 1/4 tspsalt
  6. 1/4 tspbaking soda
  7. 1 tspbaking powder
  8. 3/4 cupunsalted butter, at room temperature
  9. 3egg whites
  10. 1 cupsour cream
  11. CINNAMON RIPPLE
  12. 1/4 cupgranulated sugar
  13. 1 1/2 tbspground cinnamon
  14. CINNAMON BUTTERCREAM FROSTING
  15. 1full recipe Basic Vanilla Buttercream Frosting, fecipe attached in direction step #11
  16. 1 tspground cinnamon
  17. GARNISH
  18. 12to 14 cinnamon bear candies

Cooking Instructions

    Preheat oven to 350. Line 12 to 14 standard cupcake tins with liners

  2. 2

    MAKE CINNAMON RIPPLE. In a small bowl mix the 1/4 cup sugar with the 11/2 tablespoons cinnamon.

    MAKE CUPCAKES

    In a medium bowl whisk flour, baking soda, baking powder, salt and cinnamon

  5. 5

    In a large bowl beat butter and sugar until light and fluffy

  6. 6

    Beat in egg whites, vanilla and sour cream

  7. 7

    Stir flour mixture in just until combined

  8. 8

    Put about 1 tablespoon batter in bottom of cupcake tins. Sprinkles with cinnamon sugar ripple mixture. Spoon another tablespoon of batter over and sprinkles with more cinnamon sugar, add another amount of batter just to top sugar mix than using a toothpick swirl batter in each tin.

    Bake 15 to 18 minutes until.a toothpick comes out just clean. Cool 2 minutes in pan then remove to rack to cool completely

    MAKE BUTTERCREAM FROSTING

    Make Basic Vanilla Cream Frosting,recipe attached below, ADDING the 1 teaspoon cinnamon with the sugar

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
