I wanted to make stroganoff one day, but had no beef to add other than hamburger. All four of my children were still living at home. I created what I now call Poor Man's Stroganoff.

Ingredients

6 servings

2 1/2 lblean hamburger
1 smallonion, chopped
3 tbspflour
3 cancream of mushroom soup
3 canbeef broth
3 tbspWorchestershire sauce
8 ozmushrooms, sliced
1/2 cupsour cream
1 tspsalt
1 tspblack pepper
1 tspgarlic powder

Cooking Instructions

30 mins

In large skillet, brown hamburger and stir in onions. Season with salt, pepper, and garlic. Sprinkle flour over burger mixture and stir in.

Add mushroom soup, beef broth, worchestershire, and stir over medium heat.

Slice mushrooms.

Add mushrooms, stir in, and simmer over low heat until mushrooms are cooked.

Stir in sour cream just prior to serving stroganoff. Serve over a bed of wide egg noodles cooked per "al dente" instructions.

Turned out great, wanted a thicker meat sauce so I left out some of the beef broth. Definitely will make again!

I come from a family of 8 so as a kid my mom liked to cook easy inexpensive dishes that went along way! Some how the beef cubes turned to hamburger meat, the noodles to brown rice..added celery and there ya have it-Mom's Hamburger Stroganoff!:) Hope you enjoy!
