I had old fruit that I wanted to use up instead of wasting so decided to try to make a sweet bread with it. I meant to add chopped walnuts but forgot. I thought it may turn out goopy but it didn't... it turned out great :-)

Ingredients

  1. 1 1/2 CFlour
  2. 1/2 CBrown Sugar
  3. 1/4 CSugar
  4. 1 TbspBaking Powder
  5. 1/3 CButter
  6. 2Eggs
  7. 2Ripe Bananas
  8. 2Peeled, Diced Apples
  9. 1 TbspVanilla Extract
  10. 1 tspSalt
  11. to tasteCinnamon & Nutmeg

Cooking Instructions

    Peel and dice apples. In a bowl, smash the bananas and mix in the apples. Add the cinnamon, nutmeg, and vanilla extract. Set aside.

    In another bowl, combine all dry ingredients and butter.

  3. 3

    Add the apple banana mixture to the dry ingredients.

  4. 4

    Add the eggs and mix until fully combined.

  5. 5

    Place the mixture in a large bread pan lined with baking paper for easy removal.

  6. 6

    Bake at 350F for 75 minutes. Since ovens vary, start checking after 55 minutes by inserting a knife into the center. If it comes out clean then it's done.

I'm from the US but living and working in the UK (hence why some of my measurements are US and some are UK). Love inexpensive and easy recipes :-)

Great recipe! The only thing I would recommend it adding salt to the recipe :)
