Clear Soup with Egg and Ground Beef (Egg Omelet with Glass Noodles)

I made this dish in Japan and shared it with friends from different countries. I wanted to keep the authentic Thai flavor, so I brought fish sauce and soy sauce from Thailand and used ground beef instead of ground pork. Everyone was excited about the glass noodles in the omelet and really enjoyed the taste. It made me so happy!

Beat the eggs and season with fish sauce. Add the soaked glass noodles.

Heat oil in a pan. Pour in the egg mixture with glass noodles and fry until golden. Remove and cut into neat squares.

Slice the carrots and chop the green onions. In a pot, add the pork stock and water. Shape the ground beef into small balls and add to the pot. Season with soy sauce to taste, then add the egg omelet pieces. Turn off the heat, sprinkle with green onions, and serve.
