Ingredients

  • 3 cupsall-purpose gluten-free flour
  • 1 tsp.salt
  • 1 tsp.baking soda
  • 1 tsp.baking powder
  • 3 tsp.ground cinnamon
  • 1 cupsugar
  • 1 cuppacked brown sugar
  • 3 cupsgrated zucchini
  • 3large eggs at room temperature, beaten
  • 1/2 cupcanola oil
  • 2 tsp.vanilla extract
  • 1/4 cupapplesauce

Steps

  1. 1

    Preheat oven to 325 degrees F

  2. 2

    In a large bowl whisk the flour, salt, baking soda, baking powder, cinnamon, sugar, and brown sugar.

  3. 3

    In another bowl mix zucchini, eggs, oil, vanilla, and applesauce.

  4. 4

    Add zucchini mixture to flour mixture. Mix well

  5. 5

    Lightly spray bread pans (and or muffin tins) and divide the batter evenly.

  6. 6

    Bake the bread loaves for 55 minutes, turing once halfway until toothpick poked in the middle comes out clean. (Bake muffins for 20 minutes, turning pans once).

  7. 7

    Let bread or muffins cool thoroughly. These freeze well, also.

I'm pretty sure I've been cooking since I was in the womb...Several years ago I found out I am allergic to wheat and I changed my cooking a bit, but 98.3 percent of the time everything I make is fresh and from scratch and I grow as much as I can to can and freeze.If only I could get paid for all that *sigh*.
