Cooking Instructions

First, boil the tomatillos and serrano peppers. When they turn a deep green color, remove them from the water and set aside.

FOR THE SAUCE:
Add the tomatillos, peppers, cilantro, and Greek yogurt to a blender. Blend until you get a light green sauce, just like the classic color of this dish. Then, heat the sauce in a pan. - 3
FOR THE ENCHILADAS:
Once the chicken is shredded, add about 3 oz (80–90 grams) to 4 nopal tortillas. (Remember, 2 nopal tortillas are about the same as 1 corn tortilla.) - 4
