Crack the eggs into a mixing bowl and add the sugar. Add the vanilla sugar and whisk together immediately.

In a separate bowl, combine the flour and softened butter. Use your hands to mix until the dough has a crumbly, sandy texture.

Add the egg and sugar mixture and the baking powder to the flour mixture. Mix until you have a smooth, even dough. Cover with plastic wrap and refrigerate for 1 hour.

Knead the dough briefly, then roll it out to about 1/8 inch thick (4 mm). Cut out shapes with cookie cutters and place them on a baking sheet lined with parchment paper.

Brush the cookies with egg yolk using a pastry brush to give them a golden color. Bake at 350°F (180°C) for 10 to 15 minutes.
