Ingredients

35 minutes
8 servings
  • 1 3/4 cupflour ( all purpose flour or combo of all purpose flour + wheat/ semolina flour
  • 1 1/2 tspyeast
  • 1 tbsporganic honey
  • 1/2+ 1/2 cup lukewarm water
  • 1 tspolive oil
  • 1 tspsalt
  • 1/2 tspgarlic seasoning
  • 2medium onions sliced
  • 2medium tomatoes sliced
  • For the seasoning :
  • 1 tspgarlic seasoning
  • 1 tsporegano
  • 1/2 tspdry rosemary
  • 1 tspred chilli flakes
  • 2 tbspolive oil
  • Salt
  • Cheddar or any cheese
  • To caramelise onions :
  • 2 tbspUnflavoured oil
  • 1 pinchsalt
  • 1/2 tspsugar
  • 1 tbspfinely chopped coriander / parsley to garnish

Steps

35 minutes
  1. 1

    Take the flour in a deep bowl. Add salt, Add 1/2 tsp of chilli flakes and garlic seasoning. Mix all.

    Add honey to 1/2 cup of Lukewarm water. Sprinkle yeast. Mix. Cover and leave for 15 minutes.

    After 15 minutes it will look frothy. Means it perfect to use.

    Now add this yeast to the flour. Add remaining half cup water. Add a tbsp of olive oil. Mix all with a wooden laddle. Stir around 20 times. That's it the mixture is ready.

    Ready mixture

    Grease a 9 inch round baking tin covering every corner.

    Dump the batter in the tin.

    Spread with a spatula and even it out.

    Cover and leave for an hour in a warm place.

    In the meanwhile slice onions and caramelise with a tsp of oil. Add some salt and sugar and saute to evenly caramelise all over

    Slice red ripe tomatoes thinly.

    After an hour the dough will be well risen. Dent it with your thumb or a spoon. Drizzle with olive oil. Preheat oven to 200 ℃

    Start placing sliced tomatoes all over

    Now add the caramelised onions in the gaps all over.

    Complete this way

    Drizzle with herbs and little salt.grate cheese all over. Sprinkle some chilli flakes.

    Bake at 190℃ for 35 to 40 minutes. Check in the last few minutes. If you wish fir a deep colour you can broil for 3 to 4 minutes towards the end

    Remove leave for 10 minutes

    Drizzle with chopped parsley or coriander

    Now de mould and cut. Enjoy the crisp crust on the outer side with the remarkably soft crumb on the inside
