Steps
- 1
For the dough- Take wheat flour in a mixing bowl, add salt and oil and mix it with your fingertips, then add carom seeds and water little by little and make a semi-soft dough. Knead it nicely and then cover it and let it rest.
- 2
For the stuffing- In a mixing bowl take boiled potatoes, add onions, coriander, mint, garlic and mash everything nicely with a potato masher.
- 3
Now add anardana powder, chaat masala, red chilli powder and salt mix everything nicely.
- 4
Now roll a semi-thick roti out of the dough, make a ball of the stuffing and keep it in the center, now slowly gather all the dough in your hands like you do for momos, and remove the excess dough, and then slowly roll it into a paratha.
- 5
Heat a tandoor in the meantime, then place the rolled paratha on the hot tandoor and cook it for 5-8 minutes or till you get a nice golden top, then remove the paratha from tandoor and spread some butter over it and serve hot with pickle and curd.
