Hanoi Grilled Pork with Vermicelli

The Lock&Lock air fryer, which my husband recently bought, is great for Keto and makes this dish super easy to prepare. This dish is addictive because the pork is tender and juicy, melting in your mouth with every bite. Using a charcoal grill can dry it out, and regular frying can make it greasy.

Choose pork belly with a bit of fat and grind it coarsely. Marinate the pork for 30 minutes with seasoning powder, oyster sauce, cooking oil, shallots, onion, green onions, and pepper.

Shape the pork into small patties and place them in the air fryer. Set the temperature to 347°F (175°C) for 7 minutes, then flip and cook for another 5 minutes at the same temperature. The pork should be perfectly cooked as shown in the picture.

While the pork is cooking, make the fish sauce. Use a 1:1:3 ratio of fish sauce, sugar, and water. Use any spoon to measure according to this ratio. Gently heat on the stove until the sugar dissolves, then let it cool slightly. Mince the garlic and chili and add them to the sauce.

For the pickles: Thinly slice the kohlrabi and carrot. Add a little salt and vinegar, let it sit for about 10 minutes, then rinse with water and squeeze out the excess liquid. Add to the prepared fish sauce.

Wash and dry the fresh herbs. By this time, the air fryer should beep, indicating the pork is done. Serve and enjoy immediately. Good luck and enjoy your meal!
