Sautéed vegetables and baked flounder with potatoes and bell peppers—a way to get myself to eat fish, which I usually don’t like.

Wash all the vegetables and slice them. Sauté everything in a skillet.

Meanwhile, in a baking dish, layer sliced potatoes and onion, place the flounder fillets on top, garnish with cherry tomatoes, and bake for 35-40 minutes.

Once the vegetables are sautéed, deglaze with white wine and serve.
