Quinoa Stew with Cheese and Milk

Cook the quinoa in water for about 30 minutes. Meanwhile, make a sofrito by sautéing the onion and garlic, then add the ground turmeric (optional), salt, pepper, and cumin.

Add the onion sofrito to the cooked quinoa and cook for about 5 more minutes so the flavors blend well.

When everything is well cooked and almost ready to remove from the heat, add milk, diced cheese, and finally the huacatay.

To prepare the brown rice, use 2 3/4 cups water (about 650 ml) for every 1 cup of rice mixed with black or red quinoa to boost the nutritional value. Hope you enjoy it!
