Fennel and orange salad is a quick side dish to make during the colder months. With just a few ingredients, you can serve a fresh and flavorful salad that's perfect when you're short on time but still want something delicious. Fennel and orange pair perfectly with fish or pork dishes, and also go well with cheese—Greek feta is a great choice. This is my simple version, but you can easily add more ingredients... check out the tips at the end for some ideas.

Ingredients

Serves 2 servings
  1. 1fennel bulb
  2. 1orange
  3. Salt and pepper, to taste
  4. Extra virgin olive oil, to taste

Steps

    Start by cleaning the fennel. Remove the tough outer layers, then wash and dry it.

  2. 2

    Using a mandoline or a knife, slice the fennel very thinly.

  3. 3

    Next, peel the orange, removing both the peel and the white pith.

  4. 4

    In a plate or salad bowl, add the sliced fennel and orange. Drizzle with olive oil, and season with salt and pepper to taste.

    Tips and variations

    I recommend eating the salad right away. You can add pitted oven-roasted black olives. For a heartier salad, roughly chop some nuts (like walnuts or almonds) or add some raisins for a sweet and tangy flavor. You can also dress the salad with a mixture of olive oil, salt, pepper, and the juice of half an orange.
