First heat oil add mustard seeds and let it crackle then add urad dhal and let it become brown now comes the curry leaves hing and ginger garlic paste and cook till raw smell goes.Now add all the veggies and masala and cook well with sprinkle of water every now and then. After well cooked add roasted kasuri methi and serve with roti.
