GOI CUON, also known as Vietnamese Spring Rolls or Salad Rolls, is a very popular appetizer in Vietnamese restaurants. Unlike the usual fried spring rolls, Goi Cuon is served fresh. This snack typically consists of pork or chicken, shrimp, vegetables, vermicelli, etc., wrapped in translucent white rice paper. When held, Goi Cuon feels sticky due to the rice paper. The freshness of the ingredients is evident with each bite. It's chewy yet crunchy! It's usually served with hoisin sauce, peanut sauce, or other traditional Vietnamese dipping sauces. Ingredients

6 pieces
  • 6 sheetsrice paper (I used Banh Trang brand, 22 cm)
  • 🥗FILLING INGREDIENTS:
  • 9medium-sized shrimp
  • 2 slicessmoked ham, cut into 4 pieces
  • 1green bell pepper
  • Mint leaves to taste
  • Cilantro leaves to taste
  • Romaine lettuce to taste
  • Vermicelli or corn noodles, soaked in hot water, to taste
  • Cucumber, seeded and sliced lengthwise, to taste
  • Coarsely shredded carrot to taste
  • 🥣🐟FISH SAUCE:
  • 2 tablespoonsfish sauce
  • 1 tablespoongranulated sugar
  • 2 clovesgarlic, finely chopped
  • 1lime, juiced
  • 2 tablespoonsred chili, chopped
  • 1/2 cupwater (I used shrimp broth)
  • 🥣🥜PEANUT SAUCE:
  • 2 tablespoonshoisin sauce
  • 2 tablespoonspeanut butter
  • 1 tablespoongranulated sugar
  • 1/4 cupfresh milk
  • 2 clovesgarlic, finely chopped

Steps

    Prepare all ingredients. Soak carrots and cucumbers in water with added salt to keep their color vibrant. Ensure all vegetables and shrimp are FRESH.

    Boil water, add shrimp until they change color. Remove, drain, peel, and cut in half. Set aside. Boil the heads and shells again for shrimp broth.

    Cook vermicelli or corn noodles briefly until the water boils. Remove and drain. Cut the noodles to make them easier to eat. Use chopsticks to pick up and cut into about 2-inch pieces. Set aside.

    Make the fish sauce: Mix sugar, fish sauce, chopped garlic, and 10 tablespoons shrimp broth. Stir until the sugar dissolves, then add chopped chili and lime juice. Mix well.

    Make the peanut sauce: Sauté garlic until fragrant, then add hoisin sauce and peanut butter. Add sugar and stir until the sugar dissolves and all ingredients are well combined. Gradually add fresh milk, stirring until everything is mixed. Turn off the heat. Done.

    Dip the rice paper in warm water and place it on a clean serving board.

    Arrange vermicelli, carrots, cucumbers, lettuce, cilantro, and mint. Then place shrimp in front and top with smoked ham. Fold like an envelope, tuck in chives (I skipped this), roll tightly until neat.

    Serve with fish sauce and peanut butter sauce. Yummy!
