Chicken Gyro by Akis
Skip any spice you don't like. I did the same.

In a mortar, combine the cilantro seeds, garlic, lemon zest, paprika, red pepper flakes, and thyme.

Mix the ingredients and add salt, pepper, olive oil, and lemon juice. Let it thicken.

Cut the chicken into thin strips or small squares. Add the marinade and mix well.

In a non-stick pan, cook the chicken in batches until browned on both sides, about 3 to 4 minutes.

Deglaze with 1 tablespoon lemon juice.

Repeat for all the chicken, and when it's all ready, keep it warm in a bowl.
