Leave mix to rest in the fridge overnight

When ready to make the Yorkshire puddings, pre heat the oven to as hot a it will go.

Add lard to cupcake moulds and place in the oven to heat up.

Take the mix out of the fridge and stir only minimally.

Add the mix to the cupcake moulds, avoiding the middle one to allow the air to circulate.

Adjust the oven temperature to 200 and cook for 20 minutes.
