Dhoklas are traditionally a Gujarati dish. I've made it simpler and showcased the recipe for the new generation for a quick healthy breakfast. Hence they're steamed they're oil free too for the health conscious.

Dhoklas are traditionally a Gujarati dish. I've made it simpler and showcased the recipe for the new generation for a quick healthy breakfast. Hence they're steamed they're oil free too for the health conscious.

In a vessel at night add the dosa batter, mix the besan and stir continuously so that there are no lumps, then add turmeric powder and salt and little oil to the batter. Let it be the consistency of idli batter. Keep this batter to ferment overnight.

Now, in the morning, make the Dhoklas in the idli pan and steam them. Soft and spongy Dhoklas are ready.

Garnishing: In a pan add 1 teaspoon oil and splutter the mustard seeds, add asafoetida, curry leaves, salt and roast the chillies in the oil till cooked. Then add sugar the water and add the water to bring to boil.

Now take the steaming Dhoklas and pour the sugar water to make it soft to eat. Serve hot with green chutney, tomato sauce, coconut chutney or even imli chutney.
