Mix 1 cup of warm water and 2 1/4 tsp yeast in a small bowl with honey and let yeast activate for 10 minutes. Mix 3 cups of flour and 1 1/4 tsp salt together in a separate bowl, after letting the yeast sit mix it into the flour.

Lightly oil a glass/plastic bowl and place the dough ball into it and cover with plastic wrap. Let it rise at room temp for 1hr 45m, punch the dough and let rise for another 30m.

Bring approx 6 cups of water to a boil in a pan and add 4 tsp of baking soda. Cook pretzels in pan for about 5 minutes. Preheat oven to 450, beat 1 egg in a bowl and give an egg wash to pretzels and sprinkle with coarse salt before cooking pretzels on a sheet for 12-16 minutes.
