Wash, peel and cut torai into pieces.

In a pan heat oil. Add mustard seeds. When crackles add asafoetida. Add crushed garlic and chopped tomatoes. Saute for sometimes.

Add torai. Add salt and turmeric powder. Mix well. Add little water, cover with lid and allow it to cook.

When torai is cooked nicely, add red chilli powder, dhania jeera powder, garam masala, jaggery and chopped coriander leaves. Cook for couple of minutes.

Last add sev and mix it. Tasty sev torai sabji is ready. Serve hot with roti or paratha.
