Steps

Cut potatoes into 4 pieces and rinse under running water. Add to a large pot

Cut onions into 4 pieces and add to pot.

Peel and cut garlic gloves in half and add to pot

Fill the pot 2/3 with water and place on the stove on a high heat. Add some salt to taste. Allow to boil until the potatoes are soft.

When potatoes are soft, remove from heat and use an electric hand-held blender to blend the mixture up. Keep going until there are not solid pieces.

Return to a medium heat. Usually the soup should be thick, but depending on how thick you want it, add some boiling water to thin it out.

Break the spaghetti in half and add to the pot. Add a drizzle of olive oil and taste to make sure there is enough salt.

When the spaghetti is cook, turn the stove off and serve.

Optional: to add the chorizo, thinly slice and lightly fry in a pan with some olive oil and a splash of white wine and add to the top of the soup before serving.
