Steps

Melt jaggery in 1 cup of water and filter it to remove any impurities. Keep aside.

Take a pan add oil, once hot add Fenugreek seeds, mustard seeds, and wait untill it crackles. Then add asafoetida, neem flower, curry leaves and onion. cook until translucent.

Add chopped mangoes, haldi, red chilli powder, salt and 2 cups of water. Check if mangoes are half cooked, this is the right time to add Jaggery water. Cook mangoes throughly untill jam consistency. Mango pachidi is ready to serve.

Note: Always make jaggery water before you proceed. You can also add dry red chillies instead of chilli powder. Choose Bangalore mango(kilimuku mango/thothapuri) for this recipe.
