Measure and weigh all the ingredients.
In a large bowl, mix together all the ingredients except for the filling.
Line a baking sheet with parchment paper.
Spread the turkey mixture on the paper, shaping it into a rectangle. - 2
Place the hard-boiled eggs lengthwise down the center. Arrange the cooked carrot quarters on each side of the eggs. Then add the green onions.
Lift one side of the parchment paper and roll the turkey mixture toward the center. Lift the opposite side and fold it toward the center as well. Press the seams together in the center.
Remove the parchment paper, turning the turkey loaf so the seam is on the bottom. - 3
Preheat the oven to 375°F (190°C) and bake the turkey loaf for about 35 minutes, until golden brown and the internal temperature reaches at least 165°F (74°C).
Serve with mashed potatoes.
You can also serve it with a brown sauce, Espagnole, Bordelaise, demi-glace, mushroom sauce, or any sauce you like.
