Imli-gud ki dal / tamarind- jaggery dal

In a pan heat oil and put diced potatoes in it. Cover it for a while. Stir it occasionally. Put it on medium heat it will take 5-10 minutes to cool completely.

When potatoes are perfectly cooked stir fry them on high flame for couple of minutes to get golden colour. Once potatoes get perfect colour immediately transfer it into a plate.

Check the quantity of oil, adjust it according to your requirement. Put hing, cumin seeds and mustard seeds, saute for a minute. Now add garlic paste first then ginger paste stir till raw smell goes away.

Now add finely chopped onions and saute until onions turns translucent. Add green chilli add all dry spices except garam masala and saute till oil appears on sides.

Now add tamarind and jaggery add little water and simmer for a few minutes. You also soak tamarind and jaggery in a cup of water earlier and use in this step.

After water evaporates add cooked potatoes saute for a minute and add dal, mix it properly and bring a boil. Simmer for 5-6 minutes.

After that turn off the gas and add garam masala powder and cover it. Yummy tamarind jaggery dal is ready to serve.

Serve hot with chapati or rice. I like it with bati so this is my bati's perfect partner.

Note-- Always grind tamarind and jaggery before use for better results
Use tamarind and jaggery more or less according to you taste
