Cooking Instructions

Cut all the vegetables as mentioned or as per liking

Steam them in boiling hot water for 4-5 minutes starting from carrots to beans and to broccoli
Don’t over do. Vegetables shouldn’t leave the crunch. - 3
Chop mushrooms and keep. No need to steam them. They get cooked when stir fried

Now strain vegetables in a colander and keep in ice cold water. This will help in maintaining the color.

Take olive oil in a pan add chopped garlic and sauté

Add vegetable and toss
Peel and cut potato in long fingersAdd salt and black pepper powder to taste.

Keep tossing to avoid sticking to the bottom
In the last add oregano and toss one more time
Serve hot

You can just use high heat from the start.As I have stated previously, it's best to stop cooking the vegetables when you think they are still a bit raw - they are crispier that way.If you are adding wood ear mushrooms (kikurage), put in a container with water to cover and microwave until they're rehydrated. Easy Veggie Stir Fry Easy Veggie Stir Fry
This is a quick stir fry recipe that makes a great lunch or lighter dinner. You could add some protein of your choice to it to make it more hearty, but I enjoy it with just the veggies. I like to use a packet of the ramen noodles (without the seasoning packet, which is what mainly makes ramen not great for you) because it's cheap and quick cooking. You can swap the veggies for whichever one's you'd like. Christina
