Healthy Aloo Kofta in Smoky Gravy

This is a quick fix dinner recipe with non fried koftas and no cornflour for binding. The gravy is rich in onion tomato garlic but minus the traditional long cooking time. Technique here is simple and quick with bonus of smoky flavour infused through coal.

Steps

Lets prepare kofta first. In a bowl, grate boiled potatoes and add coriander, black pepper powder, salt and oats in it. Mix well and make round balls. Oats act as binding agent.

Now grease appe pan with slight ghee and cook appe in it on medium burner at medium flame.

Flip sides from time to time to brown the koftas from all sides at low medium flame and keep aside.

Now coming onto gravy, grind onion, tomatoes, garlic, chillies and ginger together in a grinder jar and ready the paste.

Take a wok, heat little ghee in it.

Add dried red chilli, asafoetida, cumin seeds and bay leaf. Saute for 15-30 seconds until fragrance of spices comes.

Now add the grinded paste into the wok along with 1.5 tsp salt and saute for a minute. Then Cover with lid for 2 minutes at low flame.

Add turmeric powder, coriander powder and kashmiri red chilli powder(optional). Kashmiri red chill is added for nice red gravy colour. You can skip as i too have skipped in this version. Saute.

Now you will notice little ghee on sides, add mawa at this stage and cook for another minute.

Now add 1+1/4th cups water and bring it to boil. After a boil, turn to low flame and cover it with lid and let it simmer for 2-3 minutes. Then add fresh coriander.

Now meanwhile for smoky flavour, burn 2-3 small pieces of coal on burner.

Keep one steel bowl in middle of gravy, add in hot coal. Pour ghee from top onto the hot coal.

Smoke will come, immediately cover with lid and seal in the smoke for minimum 3-5 minutes for nice light coal flavour. Increase the time if you wish strong flavour.

Please note, switch off the gas while you leave coal in the gravy.

Now after the desired time, uncover, remove the bowl carefully as it is hot, add coriander.

Serve hot with koftas and dip koftas in gravy just before serving.

Garnish with cream and coriander.
