Dal Palak with Veggies

This is an usual recipe , rich in proteins , micro-nutrients and antioxidants , Incorporated in the dish by using various ingredients. As a vegetarian, I prefer for such wholesome dish with rice /roti twice a week. Split yellow moong dal , veggies and palak (spinach)with less amount and types of spices.
Dal Palak with Veggies

In a pressure cooker take soaked dal, veggies, water, salt and turmeric powder. Pressure cook for 1 whistle. Let the pressure naturally.

In a wok heat oil. Add panch phoran and let them splutter. Add chopped onion and saute till rawness is gone.

Add chopped tomatoes, green chilli and grated ginger. Cook till tomatoes are soft.

Add chopped spinach and grated coconut and fry for two minutes. Then add this spinach masala with the boiled dal and vegetables in pressure cooker.

Mix well and cook covered till one boil.

Switch off the flame. Mix to dal roasted cumin powder, black pepper powder and ghee. Cover for 2 minutes and serve with Rice and/roti.
