An easy chicken wings marinade made in a mortar and pestle, one of my favourite kitchen implements. I marinate my wings for a minimum of 24 hours for serious flavour.

An easy chicken wings marinade made in a mortar and pestle, one of my favourite kitchen implements. I marinate my wings for a minimum of 24 hours for serious flavour.

In a mortar and pestle mince garlic, then add rosemary and crush it as well. Smells good hey. Then add the chilli and look away to avoid sneezing and mix.

Mix all ingredients and then add olive oil. Place wings in a freezer bag and pour marinade in. Massage marinade till all the wings are coated. Close and refrigerate for minimum 24 hours.
