This is a simple spicy dish. Usually made in a simple way.
Steps

Wash and chop the baigan and potatoes and soak in turmeric powder water. By soaking in this water the baigan doesn't turn black.

Heat oil, add jeera, onions, green chillies, ginger and garlic granules. Saute well. Add the potatoes. Cook on high flame. Keep stirring at intervals.

Now add all the dry spices, salt. Mix well. Add the baigan. Cover and cook on slow flame without water. Just with the steam let it cook.. When done, serve in a serving bowl, garnish with coriander leaves.
