Ingredients

2 people
  • 200 gQuorn pieces,
  • 100 gcarrots, cut into thin circles,
  • 1/2yellow or red bell pepper, sliced,
  • 1/2onion, sliced,
  • 100 gMushrooms, sliced,
  • 1 tbsptomato pureé paste,
  • A fewdrops Worcester sauce,
  • 1/2 tspgarlic granules, or 1 clove, minced,
  • 2 tspfajita seasoning,
  • Salt and pepper to season,
  • 1 tspMexican herb mix (optional),
  • 1small pinch red chilli flakes to garnish
  • 200 mlwater,
  • 1 tbspcoconut oil for frying, or any neutral oil

    Heat up a large wok or frying pan over a medium heat and add in the oil. Once hot add in the onions and fry for 2 minutes, then add the carrots, peppers and mushrooms. Season with salt and pepper and fry gently for around 3-4 minutes stirring occasionally.

    Add the fajita seasoning, garlic and Mexican herb blend along with the Quorn pieces. Add in the tomato paste. Stir to coat the ingredients then fry until the Quorn has softened a little.

    Pour in the water and bring to a simmer. Add in a few drops of Worcester sauce. Begin to reduce down, stirring occasionally until thickened and there's just enough sauce to coat everything. Remove from the heat and serve up, sprinkle over a few red chili flakes to desired taste. Enjoy! :)
