Chop up mint, stems and leaves.

Mix all ingredients for marinate

Marinate chicken for at least 15 minutes.

Preheat oven to 400•F

Bake in glass bakeware covered with foil for 20 minutes or until internal temperature is 165•F

Let sit 5 minutes to cool. Then serve.
