This recipe has my heart because I am from Moradabad and has grew up eating this for breakfast with jalebi! It's a famous dal which is eaten alone as a chaat and no chapati or bread is required.
It's the right recipe for flavour1 challenge "salty" because this dal is made from two types of salt only. Black salt and Rock Salt.

It's the right recipe for flavour1 challenge "salty" because this dal is made from two types of salt only. Black salt and Rock Salt.

Steps

Soak the moong dal for minimum 6 hours. Best overnight.

Now drain it's water and transfer the dal in a pressure cooker.

Add 2 cups of water to it along with 1/2 Tsp Rock Salt and 1/2 Tsp Black Salt. Mix.

Now bring the water to boil and you will notice white foam on the dal. Please remove this as it's very harmful for health especially for thyroid patients.

Now Add 1/4 Tsp Bandhini Hing. This is mild in flavour thats why adding little more quantity than usual. Mix.

Now take 5 whistles at high flame then turn the flame to low for another 5 minutes and switch off the gas.

Let it cook by itself in steam and open the lid only when the steam is completely out.

Now stir it nicely with a ladle and make it smooth.

Now switch on the gas again.

Add 2.5 cups boiling water in it if you plan to eat the dal immediately. Else add 3 cups water because this dal has tendency to become very thick once it cools down. Bring to boil. Add water gradually and not at once. Keep on stirring and keep on adding water.

Now again add salt at this stage. 1/2 Tsp black salt and 1/2 tsp rock salt. You taste here and then add as per your taste.

Turn to low flame and nicely stir it in circulation motion to make it smooth and keep on stirring it occasionally so that the dal doesn't stick to the bottom and remains smooth and shiny. Do this for 5 minutes.

Now your dal is ready. It's time to do a very important step. Serving.

We will ghee roast lakhori mirch. Famous pili mirch on iron wok in 1 Tsp ghee until it turns black.

Now crush 1-2 lakhori mirch in 1 bowl of dal when it cools down and add 1 tsp Green coriander chutney, 1 dollop of Butter, 1/4 tsp roasted cumin seeds.

Also add 1/4 tsp garam masala and 1/4 tsp chaat masala and 1-2 tsp lemon juice. Mix and serve.
