This is a great way to start your day. I made this while trying to come up with a breakfast recipe which is high in proteins, essential vitamins and minerals. The lentil and oats combination makes it a great meal for either breakfast or a quick brunch. It even works as light dinner. Use it to introduce the vegetables along with protein.

Ingredients

  1. 200 gms/ 2 cups Yellow Lentils (also known as green gram dal or moong dal)
  2. 50 gms/ 0.5 cups Whole Green Gram (moong)
  3. 100 gm/ 1cup Oats
  4. 0.5 cupsYoghurt / Curd - whisked
  5. 1 pcOnion, finely chopped
  6. Coriander Leaves few sprigs, finely chopped
  7. 1 inchGinger, grated
  8. 3/4 tspCumin seeds
  9. 3/4 teaspoonRed Chilli powder
  10. 1 tspfennel seeds
  11. 2 tspLemon juice
  12. As needed- Salt
  13. Avocado Oil or Canola Oil for cooking
  14. Optional
  15. 50 gmSpinach or Kale Leaves, finely chopped
  16. 2Green Chillis, finely chopped
  17. 1/2 teaspoonTurmeric powder
  18. To add protein
  19. 15 gmshemp protein / pumpkin protein powder
  20. Equipment used
  21. Flat skillet, preferably cast iron
  22. Flat spatula

Cooking Instructions

    Clean, wash and soak the yellow lentils and green grams in water for 4 to 5 hours. Soak oats separately. After soaking is over, drain the water.

    Grind the soaked grains to make a smooth and thick batter. The batter should be of pouring consistency. Pour the batter into a large mixing bowl.

    Add the remaining ingredients except the oil and stir well to combine.
    Check the salt and adjust to suit your taste.

    Heat a skillet on medium heat and grease it with oil. Pour a ladle of batter and spread it into a thin crepe. Drizzle some oil around the centre and the edges of the crepe.

    Let it cook well until the base gets light golden brown color. On top of the crepe add chopped onions and chopped spinach while it is half cooked. Flip and cook on the other side.
