4potatoes peeled and diced into small cubes
2 canstuna drained from olive oil
About 4 chopped tomatoes
Halfan onion sliced
2 tbschopped parsley
Handfulitalian Castelvetrano olives
1/4 cupextra virgin olive oil
Juice of half lemon
to tasteSalt and pepper
Any Pickled vegetables of choice (optional)

Fill a pot with water and add the potatoes and salt then bring everything to a boil until the potatoes are tender but not mushy

In a large bowl add all of the ingredients along with the cooked poatoes give a good toss and season to taste.Put in the fridge for an hour before serving
