Mi Quang Frog Noodles

Marinate the frog pieces with oyster sauce, fish sauce, salt, bouillon powder, and juice from grated turmeric (discard the pulp).

Heat oil in a pan and sauté garlic and shallots until fragrant. Add the marinated frog and stir-fry until firm. Pour in the water. Once boiling, season to taste with the remaining spices. Mix 2 cups of water with 1 tablespoon tapioca starch, then add to the pot to thicken the broth.

Heat oil and sauté green onions, then toss with cooked Mi Quang noodles. Place noodles in bowls, ladle the frog broth over, and enjoy.
