Vietnamese Flan

Flan is a dessert that's very easy to make, but it can be tricky if the egg-to-milk ratio isn't right or if it's not baked properly. Today, I'm sharing my go-to Vietnamese-style flan recipe that I often make for my family at home. With this recipe, the flan won't be as rich as the traditional version made with heavy cream, but the ingredients are easy to find at the market and the flavor is still wonderful.

Today, I'm sharing my go-to Vietnamese-style flan recipe that I often make for my family at home. With this recipe, the flan won't be as rich as the traditional version made with heavy cream, but the ingredients are easy to find at the market and the flavor is still wonderful.

Make the caramel: Add the sugar and a little water to a saucepan. Cook over medium heat until the sugar turns a deep amber color, then remove from heat. Quickly pour the caramel into the molds.

Gently beat the eggs and egg yolks together. Be careful not to beat too hard to avoid creating bubbles.

Heat the milk on the stove until it's warm.

Mix the warmed milk with the sweetened condensed milk until well combined.

Combine the egg mixture with the milk mixture, mixing gently. Avoid creating bubbles.

Strain the mixture through a fine mesh sieve until smooth and free of lumps.

Add 1 teaspoon of vanilla extract and stir well.

Pour the egg and milk mixture into the molds lined with caramel.

Preheat the oven for about 10 minutes. Place the molds in a baking dish, add hot water to the dish until it reaches halfway up the sides of the molds, and bake at 320-340°F (160-170°C) for 40 minutes. Tip: Place a towel at the bottom of the baking dish to prevent the molds from getting too hot.

After baking, insert a toothpick into the flan. If it comes out clean and the surface is set, the flan is done.

If you don't have an oven, you can steam the flan over medium heat. Make sure condensation doesn't drip onto the flan by covering the pot with a thin cloth or wiping the lid every 5-10 minutes to prevent holes from forming in the flan. Good luck!
