The dish is a Sindhi speciality...Being Sindhi I would definitely love that people should know about Sindhi Cuisine. Most of the time for gravy dishes, onion is used as base but for this dish, Brinjal is used as base which makes this receipe unique in itself. The dish is my mother in laws speciality and I mein proud to say that she made me also expert in this dish.

In cooker add oil. To it add jeera, fenugreek seeds, curry leaves, green chilies, then add finely chopped eggplant. Add salt and turmeric. Mix it well and allow it to be soft and keep mashing it. Then add fresh tomato puree.To that add coriander and red chilli powder.Saute the tomato puree for 8 to 10 mins. Then add all raw veggies. Mix it and saute the veggies for few mins till veggies get little soft. Cover the cooker andthen one whistle. Bhugal sabzi ready to serve with rice or bhakri.
