#coco Tried this main course recipe with coconut milk base along with 9 different varieties of vegetables, fruits and nuts. This rich and creamy gravy of coconut milk will delight your taste buds.

First of all, heat a pan, add some oil and then add roughly chopped garlic, ginger & green chillies. Sauté them on medium flame and then add roughly chopped onions to it. Add some salt and let it cook for 5-7 minutes. Then switch off the flame and let it cool a bit before grinding it to a smooth paste in a blender jar.

Again heat some oil in pan & add the grinded paste to it along with cashew paste. Mix well and let it cook till the oil separates from the gravy.

Now add 2 cups of coconut milk to it and mix well. Let it come to a boil and then add the slightly sautéed vegetables of your choice to it. I have used paneer, cauliflower, carrot, french beans & potatoes. These are 5 vegetables and to make it Navratana kurma add chopped apple and pomegranate kernels along with some almonds and cashews.

Let the navratnas cook in the coconut base gravy for 5 minutes & then add garam masala and kasoori methi to it. Adjust the salt as per your tatste. & it is ready to be served with parantha or chapatis. Enjoy 😊
